Christmas Trifle!

Christmas is not far off and I'm gathering recipes and ideas to post on my food page. While searching I found this amazing trifle recipe by Gordon Ramsey. It's not the usual trifle recipe that we're used to but found it quite impressive and totally decadent using swiss roll, a chocolate mascarpone layer and topped with amaretti biscuits. Now, wouldn't that be just a perfect end to our Christmas lunch!!!

Ingredients
· 3 large pears (or 4 smaller)
· 100ml grenadine
· 400g jam filled Swiss roll
· 4 tbsp medium dry sherry e.g amontillado

For the custard
· 6 medium egg yolks
· 50g caster sugar
· 2 tsp cornflour, sifted
· 1 vanilla pod
· 600ml double cream

For the mascarpone chocolate layer
· 100g white chocolate
· 400g mascarpone
· Zest 1 orange
· 150ml double cream

To top the trifle
· 80g amaretti biscuits, crushed
· 350ml double cream

Method

1. Peel the pears and chop into bite size pieces. Heat the grenadine in a small saucepan, add the pears, cover and simmer for 3 minutes. Pour into a bowl and allow to cool completely before using.

2. For the custard whisk the egg yolks, sugar and cornflour together in a heatproof bowl. Split the vanilla pod in half and scrape out the seeds. Pour the cream into a saucepan, add the vanilla seeds and pod and heat until the cream is just simmering. Pour the hot cream over the egg mix, half at a time, and whisk well. Pour the whole mixture back into the saucepan and whisk constantly over a low heat until the custard has thickened. Refrigerate to cool before using.

3. For the mascarpone layer, melt the chocolate in a bain-marie then mix into the mascarpone with the orange zest. Whip the 150ml double cream and mix with the mascarpone and chocolate.

4. Slice the Swiss roll into rounds (no thicker than 1cm). Use these to line the base and sides of a glass trifle bowl. Sprinkle the sherry over the cake lining.

5. Place half the mascarpone cream in the bottom of the serving bowl, then drain the pears and scatter in half of the fruit. Spoon in half the custard and spread out evenly. Sprinkle over half the crushed amaretti and then finish by repeating the layers with the remaining mascarpone cream, pears and finally custard. Whip the 350ml cream to soft peaks and pipe or spread over the custard to finish the top of the trifle. Decorate with remaining crushed amaretti.

6. Leave to set in the fridge for at least 2 hours before serving.

Paula Manoli-Gray - The Pain of Parking





I have lived in lovely Larnaca for most of my life, but there are many shops and other establishments that I have never set foot in, despite often driving past and thinking 'that looks nice'. The reason is very simple; if I can't park, then I am not going in!


This rule of mine also extends to the shops that are in those fiddly roads you have no idea how to get in and out of too – like the Aradippou/Larnaca road that takes you to the Nicosia roundabout, and the area of Debenhams (either side). I am sure I have missed out on lots of great things as a result of my unrelenting policy, but I cannot understand how and why people open their businesses without having any proper access or parking for potential customers? I am not one to risk parking illegally or dangerously just to pop into a shop, so if I can't easily or legally get to it, then I just won't bother.


I am not lazy, and I am happy to walk – like parking up in the multi-storey or municipal car parks in town and walking around the shops – but so many shops are randomly inserted into residential streets or perched on main roads, without car parks nearby. If I were the Queen of Larnaca, then I would implement a policy of having shops clustered in areas with ample parking, and forbid a random shop opening in the basement of someone's house! If I were to take it one step further (as is my anally retentive need for order and organisation), then I would demand that shops were grouped logically too – like Tottenham Court Road in the UK where you will find all the electrical stores together, or London's Savile Row where the tailor's shops line the street. At the very least, I believe that it should be a legal requirement for establishments to have at least three parking spaces (except for the supermarkets who quite rightly have their own car parks). Maybe it is already a law that I am unaware of, which wouldn't surprise me as hardly any laws are implemented and upheld anyway…


The other issue that drives me nuts – which is probably borne from this lack of parking – is when shop-owners (illegally) prevent people parking outside their establishments unless it is for their particular store. They put signs up to that effect and shout at people who park outside but then go into the shop next door or across the road. We kind of accept this, but in actual fact, the kerbsides do not belong to the property they are in front of and are public property, therefore, we have every right to park there and not use the shop, but would we dare? I have heard many a tale of drivers suffering abuse, and even damage to their cars for parking outside someone's business and not going in!


The most puzzling thing is that new buildings are being constructed without parking taken into account so it isn't just that the population and number of cars have exploded and can no longer be catered for. Someone please make me Queen on Larnaca so I can get this sorted, otherwise I will just have to keep going to the same 10 shops – where I can park - for the rest of my life!

Homemade Truffles



Truffles....one of my favourite home-made gift ideas...I've made these in the past and included in gift boxes and baskets, I think they were much appreciated!! These delicious little bites just add a bit of luxury to your Christmas gifts.... they're super easy to make and the great thing about them is that you can make them ahead and freeze them until Christmas..here's a recipe.....

Ingredients

8 ounces bittersweet chocolate, finely chopped
8 ounces milk chocolate, finely chopped
1 1/3 cups cream
1 tsp vanilla
11 tablespoons unsalted butter, room temparature

Method
Line a 13 by 9 inch rimmed baking sheet with cling-film.
In a heatprood bow,, set over simmering water, melt both chocolates until smooth.


Place cream and vanilla in a small saucepan over medium heat. Heat until cream just comes to a boil. Remove from heat. Let cream cool.

Mix chocolate mixture with cream mixture. Add butter and mix well. Pour into baking sheet and cover with cling-film pressing down gently to prevent a skin from forming. Refrigerate overnight.

Using a melon scoop or a tablespoon take a small piece and using your hands make up little balls. Transfer onto baking sheet. Place them in the fridge. Because of the heat here in Cyprus, I would have the baking sheet in the fridge and add a few truffles a few at a time as I made them. Also I would put my mixture in the freezer for about 10 minutes and then continue.

Freeze in air-tight container for about 2-3 weeks. When you're ready to use coat them with cocoa powder, chopped nuts or coconut.

You can also add finely chopped nuts to the truffle mixture or some alcohol of your choice, some coffee liquor of Bailey's would be a nice touch!!

The bitter pill we give our kids


Two weeks ago my son awoke with a hoarse, wheezy cough so I took him to the chemist who identified it as laryngitis. I was told that he would need corticosteroids, to which my response was that I wanted to start with a natural remedy and see how it would go. The chemist was disapproving, telling me that if it got worse my son could have trouble breathing, but gave me what I wanted; a 100% thyme syrup and eucalyptus nasal spray. A couple days later, he hadn’t got worse and the cough had turned productive (a sign he was getting better), and a week later he was perfectly fine.

The chemist was just doing his job, and another parent may have taken what he recommended without question (why would you question a qualified medical professional?), giving their child strong medication – with side effects – completely unnecessarily. Now, I am not an irresponsible mother, and if I had seen him taking a turn for the worse I would have followed up with conventional medicine. Nor am I critical or against chemists, doctors or anyone who medicates their kids, as the simple fact is, medicine saves lives and we are lucky to have it. But we are so scared of our children getting ill that at the slightest sniffle or cough we immediately jump straight to the hardcore stuff and don’t give them a chance to heal with the use of their own immune system. We also expect them to get better almost instantly, certainly within a couple of days, when in reality, these kinds of common colds and coughs need a good couple of weeks to pass.

I am fortunate to have an amazing paediatrician who always gives nature or my children’s own immune systems the chance to fight and heal first. If that doesn’t work, then she moves on to the medicated options. But from what I hear from other parents, not all doctors follow this route, which is why Cyprus is now top of the pops in Europe for dishing out antibiotics to children as though they are sweeties.

It is a vicious cycle as the children who are allowed to fight illness develop stronger immune systems to then fight subsequent illnesses, whilst those who are dosed in medication then get sick easier and more frequently as their immune system becomes compromised. It’s scary stuff and a real worry to every parent, after all, our main priority is their health and if we are told that that this is the way to do it, who are we to question it?

I am no doctor, so I don’t want anyone refusing medication for their children based on what I have written (not that I flatter myself that my words are so powerful, but I have to be sure that I am not the cause of a child suffering without medication they actually need…), but I do wish that there was more awareness on the over/misuse of medication and the harm it can do to children in the long run, and that really is a bitter pill for us to swallow.

Cyherbia educating on the benefits and uses of local herbs

With children now firmly settled back in school, Cyherbia Herb Gardens and Maze has been giving schools, scout groups and clubs the opportunity to learn about plants in a fun, experimental way through its educational visits, as well as offering advice on how herbs can help us fend off the viruses that are around the corner as winter approaches.

Cyherbia park - in the Larnaca village of Avgorou - took 10 years to create by qualified herbalist Miranda Tringis, who wanted to make products with the island’s many abundant herbs - such as lavender and thyme. As she explains, it’s her passion for herbs and their immense benefits that drove her to share this knowledge with others, and thus Cyherbia was born: “We can regain our health and stay strong and free from illnesses if we would just incorporate herbs in our everyday diet. Very often a simple herbal tea taken every day can be all it takes to heal ailments such as high blood pressure, stomach ulcers, menstrual problems etc. Education is paramount to get healthy and stay healthy.”

The premises consist of a landscaped herb garden (with nine themed gardens), a woodland area (with local trees and shrubs), and the island’s only maze - which totals 2000 square metres. There is also a distillation room where visitors can watch (and smell!) how plant essences are extracted, and a tearoom that offers the opportunity to enjoy a herbal tea whilst gaining advice from Miranda on what to use for natural healing. The tearoom also doubles as a shop which sells the freshly prepared herbal products such as essential oils, soaps and teas, amongst others.

Since its inception, the gardens have grown in popularity and expanded to include public visits in 2012, events, cookery workshops and the educational visits. The visits - approved by the Ministry of Education - have been running for a year now in English and Greek and Miranda is pleased with their success: “The feedback we've had from teachers and children has been very positive. For many kids it was the first time they've ever been in a maze, and they really enjoy it. It is also encouraging to see children discover that herbal tea actually tastes very nice and is good for your health, which we hope will get the new generation opting for natural, healthy drinks and foods”.

The educational programme consists of various assignments where the children are given a clipboard with worksheets and sent out to discover herbs in a hands-on way. An herbal tea break follows and thereafter the children are faced with challenges in the Sanctuary Woodland and a treasure hunt in the maze.

Miranda has also given various talks on how to use herbs medicinally, including a talk on herbs for children’s healthcare that she gave to the Larnaca Parents Network earlier this year. And with children back at school and bringing home all sorts of bugs, Miranda has some good advice on how to deal with less serious illnesses naturally: “It is important to nip a cold in the bud before it becomes an infection. Give your child herbal tea at the very onset of a cold - elder and/or chamomile for sinus colds; peppermint, ginger or ironwort for a sore throat, and add local honey to sweeten. Let your child drink as many teas a day as possible. At bedtime, put a couple of drops of eucalyptus or rosemary essential oil in a burner in the child’s room to aid easy breathing.’’

Chocolate,Banana & Hazelnut Bread and Butter Pudding



Anyone watching the calories turn away now!!! I was looking through recipes for bread and butter pudding and found this delectable version of this classic dessert where someone decided to take it quite a few steps further, in the direction of dessert heaven!!!

INGREDIENTS

1 Brioche loaf, crusts removed and reserved, remainder into cubes (an ordinary bread loaf will do too)
50g chopped hazelnuts
200g chocolate and hazelnut spread
2 bananas, sliced
125g good quality dark chocolate, roughly chopped
400ml whole milk
400ml whipping cream
7 eggs
75g sugar
Butter for greasing

METHOD
Preheat the oven to 180C/350F/Gas 4. Grease a large baking dish with butter.
Bake the reserved brioche crusts in the oven until golden-brown. Remove the crusts from the oven and crumble into breadcrumbs. Mix the breadcrumbs and chopped nuts together in a bowl. Set aside.
Use 50g/2oz of the chocolate and hazelnut spread to spread the reserved brioche cubes and place them into the baking dish.
Add the banana slices and chocolate and mix until well combined.
Heat the remaining chocolate and hazelnut spread, milk and cream in a saucepan, stirring continuously until well combined.
Meanwhile, whisk the eggs and sugar together in a large bowl. Whisk in the cream mixture until well combined.
Pour the chocolate custard over the bread mixture and set aside for 30 minutes, pressing the bread into the custard occasionally.
Bake the pudding in the oven for 10 minutes, then sprinkle over the breadcrumb mixture and bake for a further 25 minutes, or until golden-brown and the custard has just set.
Remove the pudding from the oven and set aside to stand for at least 10 minutes.

The warmth of community

When those who visit from abroad ask me why I like living here (often after they have stated their outrage at supermarket prices and exclaimed that they could ‘never live out here’), my reply isn’t the typical one about the weather. Nor is it about the more relaxed pace of life, or the fresh produce, or the safety-element. For me, it’s about a real sense of community.

I find that community in Larnaca can be split into two; the locals who have their close-knit families nearby, and the ‘foreigners’ who have forged their own families through the activities and groups available. I am fortunate enough to benefit from both!

For the locals, the lovely tradition of leaving work at lunchtime and going to mum’s or yiayia’s house for lunch still prevails, as does the common practise of the grandparents looking after the children whilst the parents work. Sunday is still a family day, and many locals (like me) still have keys to the family home where they let themselves in and out as they please, or just use the back door. I wouldn’t change this for the world and couldn’t give a stuff if our supermarket prices on imported goods are so crippling that it keeps those who prefer to eat out of packets where they are! As far as I am concerned, we eat perfectly well – and economically - with real, fresh food, and I think it is quite logical that imported brands would cost more… just don’t buy them!

The second ‘family’ I am part of is the community-family, created by those who have chosen Cyprus as their home. The very fact that these people have left behind families of their own to be here, out of the entire vast world of countries they could have chosen, should show those who are negative about the island (and our food prices) that it can’t be that bad out here.

I was fortunate enough to become part of this community after I became a stay-at-home mum. I was amazed at the amount of groups, activities and support there is for Anglo-speakers and how the people that are part of this world have really bonded and formed a community of their own. It’s a new kind of family for those who don’t have theirs here, and during hard times, I have witnessed everyone rally round. In one case, a lady was left with a child and no money when her partner walked out on her and that winter, her community-family provided her with firewood, clothing and food. I cannot believe that this would happen in many countries, it certainly wouldn’t if she had been back in the UK.

It is this sense of community – made up of both kinds of family; blood and created – that separates us from other European countries in similar situations and gives me the hope that we will pull through the crisis better than they. You only have to read my article on the recent donations in these pages to feel as proud as I do of the people of Larnaca – one big family.
