Carrot Cake


Ingredients

1&1/4 cups Oil
2 cups Flour I (1 cup wholemeal,1 cup plain)
1 cup Brown Sugar
1 tsp Salt
2 tsp Cinnamon
2 tsp Baking Powder
3 Eggs, beaten
3 cups Carrots
1 cup Sultanas
1 cup Walnuts

Topping
4 oz Cream Cheese
4 oz Butter
1 sachet Vanilla sugar
8 oz Icing sugar
Method

· Beat oil and sugar until nice and smooth.

· Sieve flour, salt, baking powder and cinnamon.

· Add carrots, sultanas and walnuts to the flour mixture and mix.

· Now start mixing in the eggs and then the oil & sugar mixture .

· Pour into an oiled loaf tin.

· Bake at Gas mark 5 for about an hour.

· Cream the cheese and butter. Add the sugar and mix.

· When the cake has cooled down, turn on to wire rack and top with the creamed cheese. The amount that I used will only cover the top of the cake, if you prefer to cover the whole of the cake make double the amount.

· Sprinkle some grated carrot and chopped walnuts to give it that finishing touch.

Three Cheese Greek Pie


Ingredients

4 Cups Flour
¾ Cups Oil
2 Eggs
6 TBLS Yogurt
4 TBLS Baking Powder
I Egg (beaten) for egg wash
Sesame seeds
Filling
300 g Halloumi
300 g Fetta
300 g Fresh Anari
4 Eggs
Dried Mint

Method
  • Sift the flour with the baking powder. Beat the eggs with the oil and add the yogurt, then add the flour mixture and mix until you have a smooth pastry, if it is too sticky add a little four. Leave to rest.
  • Grate halloumi cheese, crumble the feta and anari cheeses. Mix together, add the beaten egg and mint.
  • Cut the pastry into two pieces, one slightly bigger than the other. Roll the bigger piece out into a rectangular shape and place into the bottom of an oiled oven dish (app. 33 x 23 cm,depth 5cm), covering the bottom and sides.
  • Pile the cheese filling into the dish.
  • Roll out the rest of the pastry and cover the cheese mixture tucking the sides in.
  • Brush with the beaten egg and sprinkle the sesame seeds on top.
  • Bake in a pre-heated oven (180c) until pastry is golden brown.

The Impact of the Parental Relationship on Children by Dr. Andreas Anastasiou, Ph.D.

This presentation explores a variety of common challenges parents may face in their marital relationship and how those can impact their parenting style, their relationship with their children, as well as the development of their children. Related issues discussed will be:

  • gender roles in the parental relationship 
  • anger issues 
  • domestic abuse 
  • conflict resolution and empathy 
  • coping with stress 
Following the presentation there will be a Question & Answer period.

Dr. Andreas Anastasiou received his doctorate in Psychology from the University of Pittsburgh in the United States, where he taught at the university level for sixteen years and worked in a variety of mental health settings. He currently serves as Head of the Department of Social Sciences and as Associate Professor in Psychology at the University of Nicosia. In addition, he works as a staff psychologist at the Engomi Medical Center in Nicosia and maintains his private practice in Larnaca, conducting individual and couples therapy. He is also the proud father of three-year old twins.

Lemon Curd Steam Pudding


Ingredients

· 125 g plain flour
· 1 tsp baking powder
· 175 g caster sugar
· 125 g butter, plus extra for greasing
· 2 eggs
· zest and juice of 2 lemons
· a little milk, to slacken
· 300g jar lemon curd

Method

1. Fold a pleat into a double layer of greaseproof paper or foil, large enough to cover a 1.3-litre pudding basin.

2. Lightly grease the basin and the underside of the covering.

3. Bring a kettle of water to the boil.

4. Sift the flour and baking powder together into a bowl.

5. Cream the sugar and butter thoroughly until smooth and fluffy, then beat in the eggs.

6. Add the lemon zest and juice, then sprinkle with the flour and baking powder. Beat again until mixed.

7. Add a bit of milk to slacken the mixture to a dropping consistency, but don't let it become sloppy.

8. Scrape the lemon curd from the jar into the bottom of the pudding basin. Spoon the pudding mixture over the curd.

9. Cover the basin tightly with the paper or foil, to prevent steam escaping. Secure with string under the rim, and make a string handle for lifting the basin in and out of the pan.

10. Set the basin on a trivet in a large saucepan. Pour in enough boiling water to come halfway up the sides of the basin. Steam for about 1 hour 30 minutes, topping up regularly with boiling water.

11. Lift the basin from the pan and remove the covering. Take a serving dish large enough to hold a lake of sauce as well as the pudding. Place the dish upside down over the basin. Holding the dish and the basin tightly together, quickly invert. Give the basin a shake and turn out the pudding.

HAPPY MOTHER'S DAY





Classic Quiche Lorraine..Delicious hot or cold.. Spoil Mum for Mother's Day with Breakfast in Bed this Sunday 10th March :)


Ingredients For the pastry

175g plain flour, plus extra for dusting
salt
75g butter, plus extra for greasing
(alternatively use ready made pastry) For the filling
250g English cheddar, grated
4 tomatoes, sliced (optional)
200g bacon, chopped
5 eggs, beaten
100ml milk
200ml double cream
salt
freshly ground black pepper
2 sprigs of fresh thyme

Preparation method

To make the pastry, sift the flour together with a pinch of salt in a large bowl. Rub in the butter until you have a soft breadcrumb texture. Add enough cold water to make the crumb mixture come together to form a firm dough, and then rest it in the fridge for 30 minutes.

Roll out the pastry on a light floured surface and line a 22cm/8½inch well-buttered flan dish. Don't cut off the edges of the pastry yet. Chill again.

Preheat the oven to 190C/375F/Gas 5.

Remove the pastry case from the fridge and line the base of the pastry with baking parchment and then fill it with baking beans. Place on a baking tray and bake blind for 20 minutes. Remove the beans and parchment and return to the oven for another five minutes to cook the base

Reduce the temperature of the oven to 160C/325F/Gas 3.

Sprinkle the cheese into the pastry base and add the sliced tomatoes if you are using them. Fry the bacon pieces until crisp and sprinkle over them over the top.

Combine the eggs with the milk and cream in a bowl and season well. Pour over the bacon and cheese. Sprinkle the thyme over the top and trim the edges of the pastry.

Bake for 30-40 minutes or until set. Remove from the oven and allow to cool and set further.

Trim the pastry edges to get a perfect edge and then serve in wedges.

Quick Red Onion, Walnut and Blue Cheese Tarts

Tried this a few weeks ago and it was quick, easy and delicious!!!Why not create a filling to suit your taste :)


Prep. Time: 20 minutes and under

Makes: 4 tarts

Total Time: 20 minutes
Easy-peasy
  • Preheat oven to 200ºC (180ºC for fan assisted ovens)/Gas M 6. 
  • Unroll the pastry sheet and cut into four equal rectangles, place on a lined baking sheet and spread each with the red onion marmalade, leaving a small border all round.
  • Top with the nuts and cheese and brush the borders with beaten egg.
  • Bring up borders to form an edge around the filling, pinch to hold in place and brush again with beaten egg. Scatter a little thyme over tops and bake for 10 – 12 minutes until pastry is golden brown and cheese just melting. Serve warm scattered with more thyme leaves.

CyHerbia gardens and nature park is situated in the village of Avgorou, and includes a beautifully landscaped herb garden, woodland area with the endemic trees and shrubs of Cyprus, and the first and only maze (2000 sq.m.) of the island.

Directions to the herb garden: From Nicosia/Larnaca, take highway Ayia Napa-Paralimni, take exit 63 Ormidia/ Avgorou by the overhead bridge. Pass Ormidia stadium into the village going right towards the centre. At T-junction where the cafes are turn right, then left, follow signs Avgorou. Pass water reservoirs, another 5 km towards Avgorou you’ll pass Sarris supermarket. 300 m. after Sarris turn right onto the stone road leading to the herb garden after 1 km.

From the Paralimni—Ayia Napa areas, head for the village of Frenaros, taking the road to Liopetri. Just out of Frenaros take the right turn to Avgorou. Head into the village keeping the cemetery on your left, turn left at the main street junction. Follow this road through the center of the village towards Ormidia. As you leave Avgorou, take the white stone road on the left after the second speed bump. There will be signs posted so keep an eye out!
