National Curry Week!!!!


 

This week's recipe is taken from the American Academy Junior School International Cook Book and was kindly supplied by Rosie Eleftheriou from Cyprus Virgin Coconut Oil (Tel: 99206722)

Goan Chicken Curry

Ingredients:

4 large chicken breasts, cut into chunks
3 tbsp virgin coconut oil
1 tsp yellow or brown mustard seeds
1 large onion, sliced
3 cloves garlic, finely sliced
400ml tin coconut milk
Salt

marinade:
1 tsp paprika
1/2 tsp ground turmeric
1 1/2 tbsp ground coriander
1 tsp ground cumin
1 tsp cayenne pepper
1 tbsp lemon juice
1/2 tsp salt
75ml water


Mix together all the marinade ingredients to give you a loose, smooth paste.

Add the chicken pieces and coat them in the paste. They are best left to marinate for around 30 minutes to 1 hour, but if you're in a hurry, a few minutes will do.

Heat the oil in a deep frying pan and add the mustard seeds. When they start to pop and jump about in the pan, add the onion and garlic.

Cook until they're golden brown before adding the chicken and any extra paste from the marinade.

Fry over a gentle heat for about 8 minutes before adding the coconut milk.

Increase the heat slightly and bring to a simmer. Cook for a further 10-12 minutes until the sauce has thickened slightly.

Then season with salt to taste.

Serve with rice or naan bread.

Allow 1 - 1 1/2 hours to prepare and cook

Fall Craft

Here's a fun fall craft to do with your little one.  Emma and I worked on it while Lia slept but you could really easily create this with a baby or a toddler.

What you'll need:
Paper
Red, Yellow, Gold, Green and Brown color
A hand and fingers

Paint your child's hand and arm up to the elbow brown and make an arm print on the paper.  Next have your child make leaves of different colors using her finger tips. Emma loved making the tree and said that she needs to add falling leaves because its autumn.

It's a great craft and makes a wonderful memento.

Construction work
The Department of Construction of the Municipality of Larnaca informs the public that between 08/10-12/10/2012, the following construction work will be in progress:
  • Maintenance work on an old residential building on 26 Loizou Filippou street.
  • Installation of bicycle ramps at the Sea Front.
  • Premix crack repairs on Sait Mehmet Aga and Klitaimnistras streets.
  • Pavement repairs on Evagora Pallikaridi street.
  • Drain covers cleaning in the city centre.
  • Roof Access Restriction works in the Municipal Building on Georgiou Drousioti street.
  • Pedestrian crossing construction on 1st April street, by Athienites.
Finance Department


The Larnaca Municipality Finance Department informs the public that the payments of the Municipal Private Property Tax for the year 2012 as well as previous years can be made only at the Larnaca Municipality offices. A 10% fine will be added on the initial tax amount.
.
 All Refuse Collection Tax, Corporate Tax and Business Premises Tax payments can also be made at the Larnaca Municipality offices, any Bank, Coop Bank or online via JCC.

The public should settle their payments to Larnaca Municipality on time and within the given deadlines to avoid added legal and court costs.
Sewerage and Sewage Disposal Works Department
The Department of Sewerage and Sewage Disposal of the Municipality of Larnaca informs the public that between 8/10-13/10/2012, the following construction work will be in progress:
  • Artemidos Avenue: From the roundabout of the old GSZ stadium (Leonida Kioupi and Louki Pieridou) to the first exit into Artemidos Avenue (Cafe French Rendesvous)
  • Part of Faneromeni Avenue (from the roundabout of Faneromeni to Karditsas street as well as from Ag. Charalambos to Mavros toy store - instead of the normal four lanes only two lanes will be open to traffic for this period), part of Aristofanous, Samou, Pierias, Ekalis, Karpenisiou, Miki Theodoraki and Giagkou Souroulla streets and a small part of Georgiou Makri at the Igoumenitsas and Parou junction.
  • Markou Botsari street.
  • Riga Ferraiou street.
  • Glafkou Alithersi street.
  • Ioannou Pasikrati street.
  • Amarilis street.
